Cheesy Shrimp Scampi Dip

This shrimp scampi cheesy dip is always a hit at parties. A nice charcuterie board, chips, and salsa are always an excellent option, but sometimes we want something warm and more substantial that feels more comforting, especially in cold weather; this is a perfect go-to appetizer. If you, like many others, abstain from serving warm appetizers at your parties, so you don’t have to do anything and just enjoy the party, this recipe has your back. This is perfect to prep the day before, so you only have to take it out of the fridge, pop it in the oven, and serve—nothing messy here; as easy as 1-2-3. Even though seafood can be tricky to do at parties (for allergy reasons), those who can enjoy it will definitely love this tasty appetizer. This recipe can easily be altered to fit what you like and is a delicious edible option for parties. If you can’t have seafood or just don’t enjoy it, you can always substitute the shrimp for cauliflower, artichoke, broccoli, etc. You can add or subtract as you want, but this recipe is good enough for me as it is. I like to add a sprinkle of paprika on top for a bright golden crust on top, the flavor is really mild so it won’t mess up the flavor if you are concerned about that but is totally optional. If you wish to infuse this delicious dip, you only need to substitute the unsalted butter for infused butter.

Ingredients:

2 tbsp unsalted butter or infused butter

8 oz medium shrimp (small diced)

2 cloves of minced garlic

1/2 tsp red pepper flakes

1/4 cup white wine

2 tbsp lemon juice

salt & pepper

6 oz cream cheese

1/4 cup of sour cream

3 tbsp mayonnaise

2 tsp parsley

1/2 cup shredded mozzarella (Divide this in half. 1/4 cup and another 1/4 cup)

2 tbsp grated parmesan

*sweet or smoked paprika/breadcrumbs (optional)

Method:

Heat a skillet or cast iron pan in medium heat.

Melt the butter, cook the garlic and pepper flakes for a minute and throw in the wine, lemon juice, salt, and pepper and cook for another minute.

Throw in the cream cheese, sour cream, and mayonnaise; once combined, put in the 1/4 cup of mozzarella cheese, the parsley, and parmesan.

Cook for a minute until combined thoroughly.

Sprinkle the other 1/4 cup of mozzarella on top and broil for 5 minutes or until golden on top.

*If you wish to make this in advance, you can; you only have to cook it all as told, put it in ramekins or an oven-safe dish, but hold the mozzarella on top. Once cooked, cool down the preparation, cover, and refrigerate for the next day. When you are ready, take it out of the fridge, uncover, top evenly with the other 1/4 cup of mozzarella, sprinkle some paprika/bread crumbs on top and bake in a preheated oven for 25 minutes at 350 or until golden brown. Because everything is cooked thoroughly, you only need to heat it up and make the cheese toasty. As you can see, the paprika gives it a nice bright golden crust on top.

This pairs perfectly with toasty garlic bread and white wine.
