Have you seen this beauty? I fell in love with this cake first of all because of it beautiful color, the crumb is fantastic as well. Then I loved it more because of how easy it is to make. Traditionally is frosted with brigadeiro but I use a chocolate ganache, I think it takes it to the next level. The recipe doesn’t call for vanilla but I add a little bit just to enhance the flavor. I make this all the time because it’s one of the easiest cake recipes ever and I just can’t get enough of how beautiful it turns out every time. This carrot cake is so different from the regular spiced and cream cheese frosting cakes, so if you’re looking to try something different, this makes a good one. This cake is really easy to infuse, just use infused oil instead of regular oil.

Ingredients:
3 medium carrots
1/2 cup oil
3 eggs
2 cups sugar
2 cups all purpose flour
1 tbsp baking powder
Pinch of salt
Vanilla (optional)
Method:
Preheat the oven at 190C / 375F
In a blender add the carrots, oil, eggs and sugar. Blend all ingredients very well.
In a bowl mix the salt, baking powder and flour. Incorporate the wet mix little by little into the bowl with the dry ingredients mixing with a spatula. Do not over work.
Once the ingredients are thoroughly mixed, pour in a greased pan. I used a 22×22 pan. You can use one a bit smaller and bake it a bit longer.
Bake for about 25 minutes or until a toothpick in the center comes out clean.
Wait until the cake cools down and frost with chocolate ganache and chocolate sprinkles.
